Your Questions About Easy Home Cooking Recipes

Nancy asks…

What’s your favourite recipe?

I seen a question earlier that asked what people made at home. My question is – what’s your favourite recipie to cook that’s quick and easy?

I love making chicken and rice. I cook 1 cup of rice in one cup of chicken stock (instead of water, to add more flavour!) and let that sit for about 5 mins or so. Just following whats on the rice package basically, except using chicken stock instead of water.

Then I chop up about a handful of onions and put them into a frying pan, and add a small amount of olive oil or canola oil to the bottom of the pan, just enough to coat it. I defrost and fry the chicken breast on medium heat, until it browns.

After the chicken is cooked fully, I chop it up in slices and add it to the rice. Yum!

So what do you love to make that’s quick and easy? Please share!

This one is great for big gatherings or as finger food for a party!

CINNAMON CREAM CHEESE ROLLS

1 loaf of bread (or how ever many you are serving)
stick of butter melted in a bowl
1 tub of Philly cream cheese
Cinnamon and sugar mixed in a bowl

Take a piece of bread and cut off the crust. With a rolling pin flatten the bread until it’s a little thin. Once you have it flatten take a butter knife and spread on how ever much cream cheese you would like, once you have that done, roll it then cut it in half. Brush on melted butter until fully coated, than dip in cinnamon and sugar. Put in pre-heated oven at 350 degrees and bake for 10 to 15 minutes! Enjoy
*you can substitute the butter for low fat margerine or water for those watching the calories*

Meals – Learn to use a George foreman grill. See if mom or dad will buy you one.
Lean skinless (I know that is the good part) chicken, Talipia, grouper, mahi mahi, salmon, shrimp. All can be cooked on a small grill like the foreman. Sprinkle some black pepper (not too much), garlic powder, Monetary seasoning, Meat Magic, fish magic. The grill should tell you how long to cook the chicken and fish.
Stay away from white bread, pasta, white rice, white potatoes.

Eat some fresh veggies, carrots, broccoli, green beans (steam them in just a little water for about 12 minutes). Longer if not tender.
Mix it up.
You will find you enjoy cooking. Might even have mom and dad asking you to cook. It might even get all of you to sit down together and eat. Bring you closer.
Don’t over eat at one meal. Meat about the size of your palm. Try to eat 5 times a day. When you cook something have enough for one or two more meals. Put them in small plastic containers in the fridge. Eat every 3 hours. Keep metabolism even.

See if your parents will buy you the P90X workout. You can get them on EBay. Do the workouts. Do what you can, take breaks as needed. In 12 weeks you will be stronger, faster and ready for hockey season.

David asks…

Please teach me how to cook!! I’m lost.?

I stay home with my four year old son. I love to cook. I don’t know how to cook. All I can make are simple, fattening foods. I want to learn to cook healthy foods for my son (and myself) without buying 2948209 ingredients and breaking the back. I will share some of the meals I usually prepare..

Spaghetti and meatballs (meatballs are made with ground turkey) but the sauce is Ragu.
Meatloaf on the stove.. it gets so greasy.
Breakfast.. he loves eggs, sausage, bacon, toast and hashbrowns.
Chicken.. broiled with carrots and potatoes in the oven, grilled, bbq and fried. Sides for these are usually boxed mac and cheese, boxed mashed potatoes, and canned veggies.
Hamburger Helper with the same sides as above.
Hamburgers and fries
Frozen lasagna and garlic bread
Healthy choice canned soup and PB sandwiches
Sloppy Joe’s
Fish fillets (box)

These are what I can make and what I go back and forth with. Sad, I know. I’m embarrassed to share this but I want to do better. Can you please share your favorite healthy, easy and cheap recipes? I don’t want to fix this junk anymore but I feel lost when I’m reading recipes and it calls for fifteen different ingredients. =/

Tacos are healthy. Use the leanest beef you can find and light cheese and light sour cream. Make a big salad with tons of veggies, diced turkey, light cheese and a little light dressing. Stir fry is good too. Saute onions, carrots, celery, broccoli, pea pods or any veggies you like, add chicken and stir fry sauce, serve with brown rice. Most recipes have a lot of ingredients but the more you cook the more spices you will have on hand so you don’t have to buy all the spices. Try Sandra Lee’s Semi-Homemade recipes http://www.semihomemade.com/. Her recipes are great, uncomplicated and don’t require too many ingredients.

Lizzie asks…

I need a good juicy pot roast recipe – how do you get that killer flavor?

I’ve done it on stove top with high end cookware, in a crock pot and in the oven. Crock pot seems to be the easiest. It is good with the vegetables and everthing else mixed in. Always comes out eat-with-a-fork juicy. But I can’t seem to get that killer flavor that I’ve had in a few wonderful homes and home-style restaurants. Is it beef stock I’m missing? Some magical seasoning that southerners hide from yankees? I always get a good cut of meat and cook it slow.

Fat Jon answers:

I’ve found that cumin has an exotic kick for beef. Add it to your rub. Also, try some sweetness to offset the beef, currants or coca-cola in the braising liquid might be interesting.
