Fat Jon answers:
Easy peasy…..just do fried plantains. Total time about 15 minutes.

it doesn’t mention it in the recipe, but you can sprinkle the plantains with confectioner’s sugar or cinnamon if you want.
You could even serve it with ice cream

Help for novice cook on how to cook pork loin medallions?
Hello,
I am an extreme beginner cook, although I am trying really hard to get better. I was going to try this recipe tonight that I found in my Betty Crocker cookbook. It’s for herb-crusted pork tenderloin. Well, I was at the store, and the pork loin medallions just looked soooo much easier to prepare than the loin (already cut into 1″x3″ pieces) and were much cheaper, so I bought those. I got home and looked at the recipe again and realized that I really should have bought the tenderloin, since I don’t really know what I’m doing. I still want to cook these medallions though. I have already topped them with my bread and herb mixture and have them in my pan, ready to go. **How long and at what temperature should I cook these?** Like I said, they are all about 1″x3″ pieces. I really don’t want to mess these up. Help!
Thank you soooo much!!

Fat Jon answers:
You’ll really need to pan fry them in a skillet. I don’t think they will bake very well.
Big pieces of meat can stay tender when roasting or baking. Small pieces of boneless meat generally won’t.
Also, the breading won’t have as much time to brown and cook as it would have had with the whole pork loin.
Since you already have the breading on them, try heating a thin layer of olive oil in a wide frying pan over medium high heat. You can melt some butter into the oil too (optional) After the oil is hot, brown the breaded medallians on each side. I’d guess about 4 minutes per side, but keep an eye on how brown they are getting. Don’t crowd them too much. It’s better to do them in a couple of batches if you have to.
If you don’t have olive oil, you can use vegetable oil (Wesson, Crisco, whatever)
A nonstick pan would be easiest.
Good luck!

Trying to cook!?
So the domesticated thing doesn’t come easy to me. My fiance and I live outside New York City and eat out 6 nights a week with all of these great restaurants near by. The problem is we are tying to save up for a wedding and I want to try to eat at home at least 4 nights a week. The only thing I can make is Pasta. The thought of touching raw meat grosses me out, so any non-meat easy recipe ideas?

Fat Jon answers:
Look for casseroles that include a mixture of pasta and vegetables (vegetable lasagna?). Also, you can buy small packages of cooked chicken in the grocery store, but they are expensive.

No grill, what should I use?
A recipe (Easy Lemon Pasta with Chicken from Down Home with the Neelys) says that i need to grill chicken. However my grill isn’t working at the moment! Which method should I use to cook it?
if you ever made this recipe comments would help

Fat Jon answers:
I would broil it!! That is almost the same as grilling. Spread the seasoned chicken out on the broiler tray and slip it in about 3 to 5 inches under the heating element. So it isn’t up against the flames or heating element is just fine. Turn the temp guage all the way to high or broil and the broil dial to that rather than bake.
Cook about 10 to 15 minutes and turn. Cook another 10 to 15 minutes. Done when fork slides in very easily.

Diary Of a Young Wife
Monday:
Now home from honeymoon and settled in our new home.
It’s fun to cook for Tim. Today I made an angel food cake and the recipe said, “beat 12 eggs separately.” Well, I didn’t have enough bowls to do that, so I had to borrow 12 bowls to beat the eggs in. The cake turned out fine though.
Tuesday:
We wanted a fruit salad for supper. The recipe said, “serve without dressing.” So I didn’t dress. But Tim happened to bring a friend home for supper that night. They both looked so startled when I served them, I think it was the salad.
Wednesday:
I decided to serve rice and found a recipe which said, “wash thoroughly before steaming the rice.” So I heated some water and took a bath before steaming the rice. Sounded kinda silly in the middle of the day. I can’t say it improved the rice anyhow.
Thursday:
Today Tim asked for salad again. I tried a new recipe.
It said, prepare ingredients,
then toss on a bed of lettuce one hour before serving.” I hunted all over the place for a garden and when I got one, I tossed my salad into the bed of lettuce and stood over there for over one hour so the dog would not take it. Tim came over and asked if I felt all right.I wonder why? He must be stressed at work, I’ll try to be supportive.
Friday:
Today I found an easy recipe for cookies. It said, “put all ingredients in a bowl and beat it.” Beat it I did,to my mum’s place. There must have been something wrong with the recipe, because when I came back home again, it looked the same as when I left it.
Saturday:
Tim went shopping today and brought home a chicken. He asked me to dress it for Sunday. I’m sure I don’t know how hens dress for Sunday. I never noticed back on the farm, but I found an old doll dress and it’s little cute shoes. I thought the hen looked really cute. When Tim saw it, he started counting to ten. Either he was really
stressed because of his work, or he wanted the chicken to dance.
When I asked him what was wrong he started crying and shouting out “why me? why me ?”
Hmmm….It must be his job.

Louisiana Chicken and Sausage rice
Things You’ll Need:
Two to Three Boneless Skinless Chicken Breasts
One 14oz. Package Smoky Hollow Smoked Beef Sausage, sliced into 1/2 inch or smaller slices
32oz. Swanson Beef Broth
3/4 cup uncooked white rice
One small to medium yellow onion, chopped
One small bell pepper(optional), chopped
Olive oil (or vegetable oil)
salt
pepper
lemon pepper
1•Heat a large skillet (one that can be covered with a lid or a plate) on medium/high heat. Add roughly two tablespoons of the olive or vegetable oil.
•2
Lightly coat each side of the chicken breasts with lemon pepper and add them to the skillet. Brown the chicken on both sides evenly. This can be done by turning the chicken after several minutes of cooking on each side.
•3
Once the chicken has browned (each one should have beautiful golden coloring on each side), remove the chicken from the skillet and shred it(using two forks). You may also dice the chicken into peices roughly and inch or two in size if you aren’t fond of shredded chicken.
•4
Add chopped onion, chopped bell pepper, shredded or diced chicken and sliced sausage back to skillet. Stir and cover. Reduce heat to medium. Check the skillet regularly to stir the ingredients and to check the tenderness of the onion and bell pepper.
•5
Once the onion and the bell pepper have reached the desired tenderness, add uncooked rice to the skillet mixture. Stir everything together allowing the rice to soak up the flavorings from the skillet. Once everthing has been combined, add the beef broth to the skillet. Stir it once more and then cover it. Add salt and pepper to taste.
•6
Check your skillet every so often to stir it and make sure the rice doesn’t over cook. The rice should be firm but not crunchy. I actually like mine a tad bit overcooked, but to each his own. Your Louisiana Chicken and Sausage Rice will have a little broth still standing when it is done. This will thicken and make a delicious (thin) sauce as it cools.
****hope these helped!!!
Good luck and have fun! =)

I use my all the time it is so nice to come home from a long day at work and not have to worry about what to fix for dinner. It is actually safer then leaving your dryer on when you leave. You will love it. Your meat will come out so tender you hardly have to chew it.
